The AOP (Protected Designation of Origin) Comté’s land follows the natural frontiere of the Jura massif.
The cool and wet climate of this region is favourable to cattle farming ; a preserved and plentiful flora feeds the famous Montbéliardes cows that provides tasty milk used to produce Comté cheese.
Seignemartin cheese dairy refines its Comtés in Nantua, on the sides of the Jura massif.
Nantua is located on the southern part of the Jura massif where the three highest summits, one of them being the Crêt de la neige (1720m), culminate.

Along the years, the company has built strong links with cheese cooperatives and milk producers, some cooperatives have been entrusting their production for half a century !! This way, the cheese dairy not only sells product from its region but also collects and sells Comtés produced on the highlands of High Doubs and High Jura. This allows it to provide a wide range of Comtés tastes and flavours.
Because it is located near Switzerland and the Savoy and also because it became an expert in refining pressed cooked cheeses, it was normal for the company to develop a range of Beaufort and Swiss Gruyere cheese by keeping aging them in their cellars once the cheeses have been refined in their region of designation.
